Almond-Orange Semolina Cake
325 Deg. F|9” Round Cake Pan|30-45 Minutes
Ingredients:
Syrup:
1/3 Cup Sugar
¼ Cup Of Water
Zest Of 1/2 Orange
Cake:
½ Cup Semolina Flour
1 Cup Of All Purpose Flour
1 Cup Of Finely Ground Blanched Almonds
Zest Of ½ Orange
1 ½ Tsp. Baking Powder
¼ Tsp. Salt
3 Eggs
¾ Cup Sugar + 2 Tbs Of Vanilla Sugar (Vanilla Sugar Optional)
½ Cup Oil
1 Tsp Vanilla Extract (If Not Using Vanilla Sugar)
1 ¼ Cup Yogurt (4-8% Milk Fat Preferably) or 1 cup of Orange Juice
Steps:
1. Set Oven To 300 Deg. F. Grease A 9 Inch Cake Pan With A Bottom Piece Of Parchment Or Aluminum Foil. Prepare Syrup On Stove. Heat Only Until Sugar Dissolves. Close Heat And Set Aside.
2. Wisk All Dry Ingredients Together
3. In An Electric Mixer On High Speed, Whip Eggs And 3/4 Sugar Until Thick And Pale Yellow. Add Oil On High Speed For 30 Seconds. Add Vanilla Extract (If Using).
4. Beat Into Egg Mixture Alternately Flour And Yogurt, Starting With Flour And Ending With Flour.
5. Transfer Batter In To Greased Cake Pan. If you have excess batter use muffin tin.
6. Bake For 30-45 Minutes. Use A Toothpick To Test For Doneness.
7. Remove Pan From Oven And Let Cool For Ten Minutes. Then Invert Cake Onto A Plate.
8. With A Fork, Poke Holes On Top Of Cake. Pour Syrup Over Top And Sides Of Cake.
9. Enjoy.
